Creamy Roasted Tomato & Red Pepper Pasta Sauce
On a baking sheet add 3 cups of cherry tomatoes, 1 cut red onion and 2 cut red peppers with garlic and seasoning to taste, cover with some olive oil and slightly mix. Roast for 30 minutes at about 400 degrees. Once roasted blend with half a cup of heavy whipping cream and more seasoning to taste. Once blended add to cooked spaghetti with some parmesan on top and enjoy!
